- 2 cups Nilkanth 9-Grain Multigrain
- 1/2 cup boiled, mashed potatoes or paneer (for stuffing/softness)
- 1/4 cup finely chopped fresh coriander
- 1/2 tsp carom seeds (ajwain)
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Warm water for kneading
- Ghee or butter for roasting

In a large bowl, mix Nilkanth Multigrain flour, mashed potatoes/paneer, coriander, ajwain, chili powder, garam masala, and salt.
Knead into a soft, pliable dough by gradually adding warm water. Let it rest covered for 15 minutes.
Divide the dough into 6 equal portions. Roll each portion into a smooth ball.
Flatten a ball, dust with dry flour, and roll into a 6-inch round circle using a rolling pin.
Place the paratha on a pre-heated tawa over medium heat.
When tiny bubbles appear on top, flip and apply half a teaspoon of ghee on the cooked side.
Flip again and apply ghee to the other side. Press the edges gently with a spatula until both sides are golden and crispy.
Serve hot with fresh butter, pickle, or yogurt.
